The birth of another legend…

prep.jpgpic2.jpgHad some free time on my hands this moring and rounded up some of the makings for a proper Mango McMuffin. I will admit I have not found the right English Muffin and would love to know if anyone has a clue for where to find them in bkk. I used Canadian Bacon, yellow cheddar cheese, an egg and of course a nice hash brown. It needs work but I will get it right at one point. Watch here for further progress…

    Ah yes, Foodland muffins. They are dismal - I bought some recently. And then threw them away after tasting one.

    The Landmark bakery is supposedly excellent, although I haven’t tried it myself. Don’t even know if they do muffins, but worth investigating. Might have to put the price up though!

    Also, bacon and egg McMuffins are bad. Sausage and egg McMuffins are good. Please rectify.

    Nice work though - this could turn out to be king of breakfasts - aside from a Full English with extra black pudding, of course…

    Most 5* hotels have great deli’s/bakeries which might be worth checking out. I hear the one ion the Marriot is good but have never been there.

    If your looking to sell them in the bar, why not make them yourself? The smell of fresh bread has got to be one of the best smell’s in the world hasn’t it?

    Take no notice of the previous post - he knows not of what he talks. Bacon and Egg McMuffins rule.
    Other hints - it is the only gastronomic example of sliced processed cheese being king and the egg must be carefully cooked so it doesn’t burn.
    I strongly suspect you could be in for the Nobel Peace Prize should you pull this one off - more power to your elbow.

    make some country biscuits and some gravy and put a sausage patty and some egg up in there.

    Or buy some flour tortillas, some marinated shredded pork, some bell peppers, onions, tomatoes, cilantro, a dash of salt and maybe some lime. Do they have chorizo here?

    as a fellow restaurateur i can add one bit here: it is well known that (for burgers for example) american cheese works best. this is unfortunate but it is because of the “meltability” or some scientific crap. i would guess that much like McD’s does, a slice of Kraft single will work best on your Mango Muffin

    Well folks. The ingredients have to be stuff we can easily get or have delivered. Otherwise it won’t scale.

    I want to use real cheese. I think we can have a bacon our sausage choice. Combo it with the hash brown. hopefully for like 99 baht or something.

    I am doing bread research and even have people mailing me recipes.

    Bagels suck FYI. remember mc donalds tried that and moved on. My vision is the what mcd used to serve like 10 years ago but we shall see how it goes.

    I mean, it’s not hard and you guys have a commercial kitchen. At five to six minutes a pop, you could cook them off six at a time in a toaster oven.

    yp: The Nachos are still being worked on. Not rolling them out until they are jussssst right. By the party on July 4th we should have everything rolling with the exception of the full Breakfast menu. Right now we have about 61.4% of the menu available.

    smitty, how about villa for muffins? probably not the most cost effective, but i imagine they must import a brand or two directly from Blighty? Gourmands like me would be more than happy to pay a little extra for the real deal.

    I’d like to suggest that bacon butties would be a good addition to the menu too. Perhaps you could do a bacon butty set meal for hangovers, which would include mug of strong (i.e. stewed) sweet tea.

    Opinions would vary on the perfect bacon butty. Personally, I would say excellent fresh bread and bacon are the key. Back or streaky bacon are fine for me as long as there’s plenty of it and it’s crispy. I’d then add a couple of slices of cheese and plenty of ketchup or HP sauce.

    gg - i did find the frozen ones at villa. They are good but pricey. Still exploring but they are a contender.

    smitty: as a former restaruanteur as well, let me suggest that you can get a variety of tasty ‘real’ cheeses that will melt easily. My personal favorite is Monterey Jack, which — unlike M&Ms — will nearly melt in your hands. Having it on the menu can work because you can also sub it for mozzarella on many recipes, and it goes very well with jalapenos or other types of chillis.

    Also, if you have a — shit, I forgot the equipment name but it typically mounts on the wall and you usually use it for melting cheese on top of dishes. Anyway, if you have one of those you can make a unique light and airy omlette that looks great on the plate. Let your aluminum fry pan heat up while you whip the eggs so they are fully aerated, then add butter to the pan, and pour the eggs in. They will start cooking immediately, but put the pan back in the equipment-to-be-named-later. Because all the heat if from the top, the edges of the omlette will puff up like a balloon. Add ingredients and just slide it out on the pan. Fantastic! Used to be a house specialty in a place where I was the breakfast cook and we had a reputation for the most unique and best tasting omlettes in town.

    pmmp - that omlet looks great! assuming you havent already, try mixing in some thai light soy sauce to the eggs. it really helps with the flavour.

    can’t get mcmuffin out of mind. smitty, how about la boulange on convent? even though it’s french, i’m pretty sure they do english muffins plus it’s convenient to the duke. in fact, when mcdonald’s switched to hamburger buns, i thought of going there first to pick up a few before going to mcdonalds to replace the hamburger buns. there is also crepes & co. on soi 10 (or 12) - they have pretty good ones as well.

    gg - nope. no english muffins there either. believe me I have scoured town. sure they must be out there but I am waiting for a confirmed tasting before heading out.

    the villa ones will do but not cheap.

    have not checked creps an co. will see what I can do.
